Easy BBQ bacon chicken

BBQ and bacon. How could you go wrong? I threw this together on a whim because it was easier than making bacon-wrapped chicken. You see, J said we should have bacon-wrapped BBQ chicken for dinner. Which is good but kind of a pain to make sure the bacon stays put. So I said "What if!! What if I cut up bacon and onions and put it on top of BBQ chicken?" Honestly I just expected it to be decent. But man oh man it came out surprisingly good. Like I don't really understand why it came out so good. But it did! I feel like the fact that the bacon is sauteed with onions really takes the bacon to another level. It's really a simple recipe, good to make for a quick meal.

[INGREDIENTS]
  • 2 chicken thighs (breasts are fine too, but I'm confident it's better with thighs)
  • 2 tbsp BBQ sauce (I used Laura's Butt Smackin' Good BBQ sauce and I highly recommend it)
  • Salt, pepper, and an "everything" seasoning (I used Trader Joe's 21 seasoning salute)
  • 2 slices bacon
  • ~1/2 cup or 40g or 1/8 of a sweet onion, thinly sliced


[DIRECTIONS]
  1. Sprinkle first side of the chicken thighs with salt, pepper, and everything seasoning. I didn't measure anything, so just cover it fairly well and you should be good.
  2. Pour 1/2 tbsp of BBQ sauce onto the seasoned side of the chicken. I used a baster brush to make sure it was good and spread out.
  3. Place chickens sauce-side down to your pan and cook over medium heat. I sprayed with a little EVOO spray and cooked for maybe 7 min per side.
  4. While cooking on the first side repeat steps 1 and 2. Once the first side had a nice brown coating I flipped them. Use a meat thermometer if you're unsure of done-ness.
  5. Once you place the chicken on the pan, cut up your bacon. I cut it in half length-wise and then maybe into 1/2" portions width-wise. 
  6. Cook onion and bacon on pan over medium heat.
  7. Once chicken and bacon is cooked through, plate the chicken and top with onion/bacon mixture.
  8. Stuff yo face. I'm serious :) 
And that's it! Easy, right?! It's pretty versatile too! The first time I made this I made lil potato discs and broccoli on the side. This time when I made it I put it on top of cheesy asparagus zoodles with a salad on the side.
